beekman 1802 : blaak cheese

beekman-blaak I love everything Beekman 1802, the farm in upstate New York that is best known for their artisanal, chemical-free goat milk soaps, so I was excited to hear that they're now selling goat cheese. They report that it's one of the few semi-hard, aged goat cheeses available anywhere. The black, edible rind that gives this cheese, Blaak, its name comes from the coatings of charcoal that they apply routinely over the course of the four month aging process.
